We use the Toulouse goose, which is a French breed, originally from the area of Toulouse in south-western France. They are pastured-raised in Vermont, USDA Inspected, Grade A from a small organic farm then shipped to us. These particular geese are difficult to get in the summer months. They are primarily raised for fine dining restaurants and dinner tables over Thanksgiving and Christmas holidays, making them difficult to get at other times of the year.
